Our Favourite Vegan Winter Dinner & Baking Recipes
Winter is the perfect time of year to really enjoy food and the warmth you feel when eating some of your favourite dishes. Whether you’re vegan, vegetarian or are just looking to reduce your intake of animal based products, we have tried and tested the below delicious vegan recipes to give our seal of approval. We used stand mixers, slow cookers, and nutri personal blenders from the Jack Stonehouse kitchen range to recreate these dishes and they are as enjoyable to make as they are to eat!
Beetroot & Red Onion Vegan Tarte Tatin
This bright and colourful winter warmer will tantalise the taste buds, even before you’ve had a bite! The deep red contrasts beautifully with the peppery salad garnish so we would definitely recommend adding this, but you don’t have to if you don’t want to. For this recipe you only need an oven proof pan to cook, making the washing up after as easy as possible.

Satay Sweet Potato Curry
This gorgeous vegan curry combines 2 of your 5-a-day in less than 400 calories. The red Thai curry flavour perfectly complements the sweetness of the sweet potato while the peanut butter adds a subtle nutty hue to the pallet. Rather than following the method of this recipe we just took the ingredients and added them to our 3.5L slow cooker; we think this actually boosted the flavours, allowing them to soak through the whole dish on a low heat. If you’re cooking for a large number of people, we would recommend our 6.5L slow cooker.

Vegan Pumpkin Soup
This soup will be your best friend on those wintery days when you can’t quite beat the chill. The combination of ingredients and spices in this delicious vegan soup work together to create a warming and delicious lunchtime treat. Pumpkin is one of our favourite soup ingredients, especially in winter thanks to its soft texture and full flavour. To get our soup as smooth as possible, we used our Nutri Personal Blender which was the perfect size for each portion.

No winter food list would be complete without the mention of vegan chocolate brownies. While they are just fantastic all year round, the richness is even more enjoyable in winter when you just need a sweet hit to give you a boost. As we used our 6.2L stand mixer for this one, we just added all of the ingredients to the bowl for the 3rd step and set the mixer to stir it all together. Depending on how many brownies you want to make, we also have 5.5L and 4.5L stand mixers.

A classic favourite to accompany a refreshing cup of tea or coffee, these vegan cupcakes are light and fluffy. You can also customise this recipe yourself, adding different flavours and ingredients to suit your personal taste. Using passion fruit, we turned this recipe into a little taste of summer which worked wonders for beating the January blues. We used our stand mixer again for this recipe, making putting it together as easy as possible.
